In Japan, this knife style is known as a gyuto. It is the Japanese equivalent of the chef's knife. In other words, it's an all-purpose knife. It's ideal for meat and fish, yet performs beautifully on vegetables, too. Although the blade is thinner than the traditional chef's knife, it still offers plenty of knuckle clearance when cutting on a board. Best knives I have ever used
My wife thought I was crazy for paying a high price for a Shun knife, until she used it. It's the only knife she and I use for anything. Cuts through the hardest winter squash like they are butter. Great durability and razor sharp. Ours did get a small nick in the blade but still works as good as day 1. Had it for a few years now along with henkles, zwilling, wusthoff and even miyabi. This knife is lighter than the miyabi fusion but cuts just as well if not better. Would recommend to anyone who would like to buy one knife and not worrying about replacing it.

Worth every penny
OMG sharp, handle feels good in the hand slightly sculpted, appearance is one of beauty such as one would expect from the Japanese. Cut through a frozen onion with a push cut, it was almost effortless. Packaging was excellent. Haven't used it enough to need to resharpen. Using it with a bamboo board. Carefull with the edge because it is so thin don't want to nick it, don't know how durable it is VS nicks. Overall very satisfied, was a birthday present to myself
