The Case XX Stainless slicing knife arrived so sharp that my wife commented that the cutting edge caught her fingernail ! Then I straightened the edge with a 600 diamond steel then honed the edge with a 1200 grit diamond sharpener. This knife sharpens quickly and holds the edge much longer than any of the knives we owned ,being used for what it's designed for- slicing. These Case knives are constructed of surgical stainless steel , that not empty rhetoric.
