These handcrafted Dragon kitchen knives feature nitrogen steel that has a Rockwell rating of 63. The steel allows the knife to take the famous Japanese edge but also gives you the legendary German strength. No chipping or defects!

The Dragon Fire 3.5" Paring Knife is ideal for peeling, coring, trimming, decorating, and other detail work. It can also be used for chopping small foods, such as garlic cloves or ginger. Dragon Fire is constructed of 0.09" (2.5 mm) thick nitrogen-enriched American BD1N steel, hardened to a Rockwell hardness of 63. This extremely robust one-piece construction features extreme sharpness and edge retention. The handle is made of FDA-approved black resin and linen red canvas Micarta with three stainless steel rivets. The canvas material is dyed red and brilliantly finished to last for decades. The end cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance. Handcrafted from American BD1N steel with a lifetime warranty.

Unlike regular Dragon knives, the Dragon Fire range is inspired by a French design, with longer, straighter edges. It is a thinner, lighter stock using 0.09" (2.5 mm) thickness of steel, while the Dragon range is 0.12" (3 mm) thickness. The knives are fully ground and are 30% lighter weight than regular Dragon knives.

Yaxell Japan Dragon Fire 3.5" Paring Knife
The Yaxell Japan 3.5" Paring Knife is kind of large for a typical paring knife. It's blade is deeper than most and the handle is larger than most paring knives that would be used for peeling fruit or slicing an apple. There are some kitchen tasks where I would reach for a smaller, more maneuverable knife. However, the Yaxell paring knife is perfect for detailed food prep where a 6" knife is unwieldy, but the heft and blade strength is needed. As with other Yaxell Japan Dragon knives, This Dragon Fire Paring Knife is well made, very sharp, maintains it's edge well, and is rust resistant. The fit and finish on the example I own is excellent.
