Yaxell Japan Dragon Fire 3.5" Paring Knife
The Yaxell Japan 3.5" Paring Knife is kind of large for a typical paring knife. It's blade is deeper than most and the handle is larger than most paring knives that would be used for peeling fruit or slicing an apple. There are some kitchen tasks where I would reach for a smaller, more maneuverable knife. However, the Yaxell paring knife is perfect for detailed food prep where a 6" knife is unwieldy, but the heft and blade strength is needed. As with other Yaxell Japan Dragon knives, This Dragon Fire Paring Knife is well made, very sharp, maintains it's edge well, and is rust resistant. The fit and finish on the example I own is excellent.
