Also known as a Nakiri knife, the 7" Vegetable Knife has a Japanese-style squared tip that is great for chopping meat, root vegetables and big prep jobs. Popular alternative to the Santoku. Made in Japan.

Features

  • The blade is constructed of a single piece of steel, with a unique convex edge for unsurpassed performance.
  • Made of hollow handles which are then filled with sand to achieve the desired weight and deliver the perfect balance.
  • Perfectly balanced knives provide optimal control.
  • The blade is made of the finest stainless steel called CROMOVA 18 (Chromium, Molybdenum and Vanadium), designed exclusively for Global.
  • Ice tempered and hardened to Rockwell C56 - C58 degrees which holds the razor-sharp edge of the blade longer than many other steels.
  • Ergonomic, stainless steel hygienic handles with signature dimple pattern offer a comfortable, slip-resistant grip.

Cons: Overall Quality, Construction
Highly Recommended
I have owned this knife for many years and it is my favourite vegetable prep knife. It is well-balanced and holds a wicked edge. There is some slight pitting where the handle is forged to the blade, but that is only a cosmetic problem. I have never owned a better knife for this purpose.See it in use here: http://www.youtube.com/c/PetesEatsLazyCook
