Why did I wait so long to get poultry shears??!
I've used kitchen scissors for all sorts of cutting and prep and have broken a few pairs in trying to spatchcock the ole' Thanksgiving day turkey, which then goes on the smoker. But after finally deciding to get some specific poultry shears, I realized what my life was missing all these years. After using these on cutting up and cleaning a whole chicken today, my mind was blown as to how easy these cut through small and big bones as well all trimming off skin and fat. Note, the thicker the part you want to cut through, the more down the scissors you want to cut. So, if you're trimming skin, you want to use the tips, but if trimming fat and smaller bones, more the middle, and heavier bones, down towards the bottom. At the very bottom of the blades is a notch for cutting through really big bones, which I will definitely need for the turkey. When I first got them, I was a bit concerned that they didn't have a ring handle (or thumb bow, if you want to get precise), but the strength of the spring made and overall fit in the hand made this irrelevant and they worked beautifully. My only regret is in not getting these 10 years sooner.
