EASY TO MAINTAIN A RAZOR EDGE
I purchased this and also the 6" version a few months back. My other kitchen knifes are German steel and no where near as hard as these and a LOT harder to keep sharp. The only downside to this knife is it's like a surgical instrument. I have a wide variety of people using them and not all of them are "knife" people. This creates a little hard use from time to time and these knifes are very hard, thin, and I keep them razor sharp. Having said that they tend to get fine chips and are not very forgiving to abuse. I let the chipping go as the blade is still easy to keep razor sharp and have only taken the chipping out one time as even with the small chipping it stays razor sharp. I love these knives enough to just put up with having to refurbish the edge from time to time. I recommend them and would buy them again.

Great slicing knife
Used it on a roast the first day I received it and it was like slicing through butter. Kershaw does a great job even beyond pocket knives.
