The Santoku is a typical Japanese kitchen knife for the preparation of vegetables, fish, and meat. Due to its blade shape and multiple uses, the Santoku is considered the most famous Japanese chef's knife. In this version, the MKM Santoku is equipped with a cutting blade made of X50CrMoV15 with a hardness of 55-57 HRC. Typical Anso is a handle made of ziricote wood, which eliminates the usual conventions in favor of modern, angular lines.
