The K08 Santoku Knife has a 7" Santoku blade that is ideal for a broad range of kitchen cutting chores, making it the most popular "go-to" knife in many home and commercial kitchens. Like the original version, it features a premium MBS-26 stainless steel blade, ground exceptionally thin and meticulously heat treated for optimal cutting performance. Its durable polypropylene plastic handle is injection molded directly onto the tang of the blade and features a distinctive "stepped" texture pattern that provides exceptional comfort and control during use.

Favorite kitchen knife
Three cooks in my house. Everyone loves this knife. Great size and easy to manage for hands of all sizes.I have several Spyderco folders. The products are designed with some thought of functionality. Will be adding more to my collection.

Incredible knife
I'm used to using a Chinese chef knife or cleaver, so I wanted a santoku that was taller than average and found this. I was kind of skeptical of MBS-26 steel, but after years of use, I'm very impressed. I like it more than VG10.The knife came with a sharp, but uneven edge. I resharpened it much more narrow and still, the edge retention is fantastic. No rolling, chipping, or anything like that. I take care of my knives, but I don't go easy on them. This thing is a beast!

Update... not happy
I was happy with this blade. However it was only a matter of time until the wife got ahold of it. She doesn't use my knifes, the sharpness scares her, she would rather hack something with a butter knife and keep her digest I guess. Anyhow I must have left it on the cutting board and it found it's way into the sink for an overnight stay. When I found it the next day it was ruined. The rust is to deep to polish out. Not happy... in my mind a 12hour sit with some moisture shouldn't destroy a blade with today's materials. Wish I could post photos here to show the carnage, some of the worst of it is where the blade meets the handle.
