This is the knife to have.

All Case's Kitchen Knifes are wonderful. I have the whole block set including 8 steak knives, tomato knife and this Santoku knife. All Case's Kitchen knifes are wonderful and fit excellent in my hands and I found a new level of confidence with these knives. This Santoku knife is simply awesome. Sharp from the package and slicing and dicing feels like butter. This knife is a must have. However be careful and oil your handle(s) well and allow to dry and repeat (reapply oil when needed). You must hand wash these knives and keep them from soaking in water and keep them out of the dishwasher. I would recommend this knife to professional and for kitchen use. Made in the USA!!

Good Knife For The Price Point

At this price point, you don't expect a lot of bells and whistles. What you get is a sturdily constructed knife with good blade steel that will work well enough right out of the box. The handles are sharp-cornered and kind of uncomfortable after a little while, but that's easy enough to fix with a file and some sandpaper. The factory edge was acceptable, but some work with my KME sharpening system and now it's scary-sharp. It seems to hold an edge well, a quick stropping after use and it's right back to scary-sharp again. In short, it's a $50 knife that with a little hand work will feel and cut as well as any $150 knife.
