This is the first ceramic bladed product I've ever owned -- I thought Kyocera only made copiers! The ceramic blade is razor sharp and deceptively innocent looking. The mandoline is very simple to operate. There are no bells or whistles but if you're looking for paper-thin veggies, this is the way to get them. I like the flexibility and convenience of it -- pull it out of the drawer, dial in the thickness, and you're slicing in half a minute.
