The Trick to always having a Sharp Chef’s Knife is to own more than One! This knife is made of a generic version of X50, which is a German Culinary Steel that is awesome in the kitchen, my very favorite. The handle indexes perfectly in the hand. It’s a wonderful Backup Kitchen Knife for those on a Budget. Yes it is a thin Stamped blade, but it’s nice and slicey and the Ergonomics are fantastic. I would not recommend Breaking a Tuna or Beef Ribs with it, but for 95% of Home Kitchen Work it’s quite adequate. Tremendous Value, and Knifecenter’s service, packaging, and shipping were flawless.
