Exceptional knife

Have enjoyed this knife for over a year. It is as functional as it is beautiful and still looks and works as new. These knives are designed with thin blades for slicing but are strong enough for other uses as well. I would avoid heavy chopping with them I use thicker blade knifes for that in my kitchen. A Few passes with the honing steel is all it takes to keep them razor sharp. I have the pairing knife and the curved blade fillet knife and recommend them as well.

If you like a bendable knife.

I ordered this knife as a gift for my mother who has never owned a very good knife. I decided to give the knife a good looking over before I wrapped it for Christmas. I didn't find any chips, but when looking for them, I thought I saw a little bend in the blade. I held the blade up and sure enough, it was bent to the right a little. I grabbed the blade and applied a little pressure and straightened the blade, same thing again and the blade was bent to the left. I had my wife look at it, she said it was bent. I took the knife away and bent it to the right and she confirmed the blade was bent to the right. I purchased a Dalstrong knife years ago and it was much easier to bend. Dalstrong sent me another knife and it was just as bad. They made great white elephant gifts, as the eyes lit up for a while! I will not purchase Shun or Dalstrong knives. The Wusthof replacement is on order.
