KSTDM0782: 6.5" Premier Master Utility Knife

Shun

The ultra-versatile Shun Premier Master Utility combines the nimbleness of a utility knife with the do-it-all capabilities of a chef's knife. The blade is slightly longer and significantly wider, so you can easily accomplish a wide range of food preparation tasks while enjoying the ease of use and agility of a compact knife. Extra width at the heel and a slightly curved belly enables rocking cuts to easily mince herbs and spices. A larger handle gives you a secure, comfortable, and confident grip as you work. The Shun Premier Master Utility's downturned tip (similar to a kiritsuke) is extra durable. Slice, dice, shred, or portion; you can do it all with this one very beautiful, very functional, kitchen knife.

The Shun Premier 6.5-in. Master Utility Knife is part of the beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX "super steel" to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty.

Knife Center has an excellent selection of kitchen knives, kitchen accessories, cutlery, and kitchen gadgets.

Exceptional knife
Have enjoyed this knife for over a year. It is as functional as it is beautiful and still looks and works as new. These knives are designed with thin blades for slicing but are strong enough for other uses as well. I would avoid heavy chopping with them I use thicker blade knifes for that in my kitchen. A Few passes with the honing steel is all it takes to keep them razor sharp. I have the pairing knife and the curved blade fillet knife and recommend them as well.

If you like a bendable knife.
I ordered this knife as a gift for my mother who has never owned a very good knife. I decided to give the knife a good looking over before I wrapped it for Christmas. I didn't find any chips, but when looking for them, I thought I saw a little bend in the blade. I held the blade up and sure enough, it was bent to the right a little. I grabbed the blade and applied a little pressure and straightened the blade, same thing again and the blade was bent to the left. I had my wife look at it, she said it was bent. I took the knife away and bent it to the right and she confirmed the blade was bent to the right. I purchased a Dalstrong knife years ago and it was much easier to bend. Dalstrong sent me another knife and it was just as bad. They made great white elephant gifts, as the eyes lit up for a while!I will not purchase Shun or Dalstrong knives. The Wusthof replacement is on order.
