One of the Best Knives I've ever used!
These are the lightest knives I have ever used, but don't let the light weight fool you! I go to culinary school and work full time as a sushi chef, these beauties keep their edges really well and hold up to all sorts of use/abuse!!! These are just as good, if not better, than the Sakai's and other Japanese makes that I own and have used. Mercer nailed it with this line!!!
