Great Knife Great Price

These are great general use kitchen knives. I prefer carbon steel for the ease of sharpening. The edge does require some work but I did expect razor sharp when I purchased them.

great budget bushcraft knife

The 7" blade is thinner than I was used to for a field knife, but its worked great for everything but battonning. It doesn't split wood as well as thicker bladed knives, but does get it done. Anyhow, it has turned out to be a suprisingly tough and useful field knife. I rehandled it because the original scales aren't epoxied on, just held with relativly weak cutlery rivots. I watched a few youtube videos on how to do it, and then just did it. It came out great, and I now feel more connected to the knife and am proud of my work. It fits fine in a Ka Bar leather sheath. I guess the mountain men who trapped and explored the west with this knife in the 1800s had it right all along.

Really Good Butcher knife

I have several Old Hickory butcher knives . Easy to sharpen and holds an edge . The best knives in my kitchen which I use almost everything including processing deer . Good old fashioned butcher knife with carbon steel blade . No rust if you take care of them properly.

great knife

out of the box its a little dull but a couple swipes on sharpening stone and you have a great knife, very sturdy cutting large cuts of meat, has become my favorite butcher knife

the secret to a great kitchen is a sharp knife

My Old Hickory 7025 butcher knife is probably 30 years old now. It is my go-to for meat and poultry. The handle fits my hand and is secure without slipping when oils or fats become involved as they will when working with meats. I hand wash and dry as well as keep the handle olive oiled. For sharpening I use either a steel or a whet stone. It will easily hold an edge and will shave the hair off your arm. I have a 10” Old Hickory breaking knife, but it belongs in a different review, because it is a totally different category of cutlery altogether.

A great deal on a very nice knife

A very nice knife that you can sharpen easily. American made. Sad to see this brand disappearing. It's not Japanese white paper knife quality of course, but this is $22 and one of those Japanese knives are over $1500. Yah, no comparison, but for what you really need it for in the kitchen, this is a steal.

Great knife, But Misunderstood

All these Old Hickory knives are great knives. There seems to be a misunderstanding amongst some purchasers as to the quality of the steel. It is excellent steel--1095 high carbon steel. I hear complaining from some about how it rusts. It is not a stainless steel--it has no chromium in it. 1095 will rust, yet with a little care will last a lifetime and serve you well. Wipe it off when wet ( for long storage oil it). It takes a superior edge and will hold it more than a reasonable amount time. For those of you having trouble, learn how to appropriatley sharpen a knife. 1095 is far superior to stainless. We now have a generation accustomed to stainless and do not know the difference and complain when non-stainless rusts. These Ontario-Old Hickory knives are great knives and have been around, in form for hundreds of years These are great knive and people need to study knife steel online to appreciate the steel they are made with. Knife Center has fast and great service.

A Very Good knife for the Money Anywhere

I planned to use this knife as a general utility knife while camping. I thought it should do the job adequately, as with other, more expensive knives I own. The idea of having a "cheap" knife getting the similar job done appealed to me. This knife arrived in a shrink wrap. The other three (14", 10", & skinner) did not. This was the only one that arrived fully prepared to work. The other three were all in a state of inadequate grinding and sharpening that required my sharpening. The skinner was off in grinding, one side of the blade ground high, the other side lower. It appears that Old Hickory does a better job for the knives that goes out in a shrink wrap.

This is a good knife

This is a replacement for my grandmother's butcher knife which I use all the time. You don't need all the fancy knives...just a good handy butcher knife.

Great find

My father asked me to try to locate this product and I was happy to find it at the Knife Center. The price is reasonable. From previous experience with a similar product we know this is a quality knife. Carbon steel sharpens and stays sharp easier and longer than other types of steel.

Exactly What I was Looking For

I wanted a good strong knife I could take out to the grill when I'm cooking outside. I have plenty of fine kitchen cutlery but I wanted one I could use to slice vegetables and mix things up in a skillet and not have a panic attack if it accidentally gets dropped. This is perfect. Nice weight, comfortable grip and has that old time butcher style blade. Excellent!

Great value!!!

This knife has great value. A 1095 blade for less than $15? Great value. The edge isn't the sharpest but the best part is sharpening 1095 is so easy a caveman can do it! This blade will last a lifetime if cared for properly.

Great project knife

Pros -Cheap -Easy to mod -Came sharp Cons -Fit and finish -Edge bevel is around 30° If you want a cheap, sturdy knife, that's great for a project this is for you. It's carbon steel so keep it oiled and remove any rust that occurs. DO NOT put in the dishwasher. If you plan on changing the edge bevel it's going to take awhile; took me hours upon hours to change to a 20° bevel with my KME. I have used mine in the kitchen, but prefer a kitchen knife, so my knuckles don't hit the counter. Now I have sharpened the spine, forced patina the blade, crowned the spine by the handle (for comfort), and made a sheath. Great option for: the kitchen, garden, butchering, and camping

I ordered this knife to have a basic camp chore knife. So far it's been used as a knife for preparing meat and vegetables, a spatula, a stirring stick, and it has carved a tooth pick of sorts after dinner. Great knife, good shipping time from the company 2 days I believe. It comes heat-shrinked on a cardboard backing. If you plan to carry it on your person you will need to order a sheath or make one your self.

Good Traditional Knife

This is a great, traditional, 1095 high carbon steel knife. It works wonderfully for what it was designed for. The blade is thin which makes it an excelent slicer. This knife has been around for centuries and has stood the test of time. There has been one of these in my familly since Great-Grandpa came over from Ireland in the 1860's.

edge needs honing but still good quality

I don't always take my kitchen knives camping and I have "bug out bags" These are VERY close to the 'standard issue" blades our ancestors carried when colonizing the frontier. perfect size for a camping kitchen, not too big, not too small for a general purpose outdoor blade. (the 10-inch version is just-too-big) - cut meat, trim firewood, dice veggies. needs: 1) better factory edge - you can fix this in 5 minutes. 2) a belt sheath - I'm lazy and don't feel like doing leatherwork, if I can avoid it. 3) the back of the blade needs to have the square profile knocked down and polished for an inch or 2 above the hilt to avoid 'chef callus' if you cook with it - again - 5 minutes with a file and emery paper

Great knife for kitchen or camp

This is a great knife at a bargain price for use in the kitchen or around camp. Made of 1095 steel - the same steel used in many tactical and survival knives - it has attracted a lot of interest in the bushcraft community, both for use as is or as the basis for a "project" knife. Ontario picked up on this a few years back and now offers a 5-inch version as a "hunting knife," complete with a functional (though not inspiring) leather sheath. If you're a car or RV camper, buy the original 7-inch version for half the price and toss it in your kitchen kit. Along with a paring knife, it will handle all your kitchen duties as well as almost any job around camp requiring something more than a folder. I recently used mine to fashion a beautiful walking staff out of a sapling from my back yard, and it didn't miss a beat. I keep my Old Hickory knife wickedly sharp with a Smith's "10-second" pull-through sharpener, not something I'd use on a treasured blade, but for use on $12 knife it's a handy little tool.

It came as dull as a butter knife. The fit and finish are pretty bad as well. These blades have really gone down hill!
