Favorite kitchen knife

Three cooks in my house. Everyone loves this knife. Great size and easy to manage for hands of all sizes. I have several Spyderco folders. The products are designed with some thought of functionality. Will be adding more to my collection.

My go-to knife in the kitchen!

I've had this knife for over a decade and it's still my main kitchen knife. It tackles just about every cutting job you throw at it with ease. The blade was quite sharp out of the box and hold its edge well. The handle fits nicely in my hand and the knife is well balanced. I actually prefer a knife that's on the heavier side but this is one of the lighter knives I own and I have no complaints. Tough to beat especially for the price.

Awesome Slicer!

When I first got this knife, my first thought was..."The blade stock is really thin." After I started using it, I realized this was a strength. This blade is an amazing slicer. It slices through carrots, potatoes, tomatoes and pretty much any vegetable with ease. You just push cut and, with the slightest effort, the blade slides right through the veggie with very clean cuts. This is a great food prep knife. Lightweight and not too expensive. I'm not sure about the overall durability, but it hasn't looked worse for the wear after about a year of use.

Pleasantly surprised...

Very impressive out of the box. I have a high dollar sharpener and keep a mirror finish on all my decent blades wither kitchen, EDC, or field blades. I fully expect to reshape and sharpen any new knife I get. Although this blade was not a mirror finish it was almost as sharp as I could make it. I was worried about the grip as it looked hard to keep clean in a kitchen atmosphere but that is not the case as the handle features are not to aggressive. It fits nicely in my hand slightly oversize hand with a nice balance and feel. The blade has a bit more curve to it than my other kitchen knifes and that took a bit of getting used to but now I prefer it. I have had it for only a few months now but it gets almost daily use on my wood board and it has maintained it sharpness nicely. Only aspect I can not comment on is it's sharpenability because I have had the need to yet. However even if it takes longer than desired it has already proven its worth considering how long it keeps its edge. This has been my first Spyderco blade of any style but Spyderco might also be my next blade.

Great Knife

We use this as a daily kitchen knife and couldn't be happier with it. It comes extremely sharp and holds an edge well, even better than some higher dollar knives we own. Its thin blade is perfect for chopping and dicing. Overall, I am extremely happy with the knife and would recommend it to anyone that likes a large Santoku knife.

Great knife!

I don't have the current Santoku from Spyderco, but I have a pre-discontinuation one that I've owned and used heavily for something like ten years. It's by far my favorite knife in my kitchen. It's easy to use, feels great in the hand, and is easy to sharpen. I strongly recommend adding this knife to your kitchen kit. I'll be getting myself a new one from KnifeCenter very soon.

Incredible knife

I'm used to using a Chinese chef knife or cleaver, so I wanted a santoku that was taller than average and found this. I was kind of skeptical of MBS-26 steel, but after years of use, I'm very impressed. I like it more than VG10. The knife came with a sharp, but uneven edge. I resharpened it much more narrow and still, the edge retention is fantastic. No rolling, chipping, or anything like that. I take care of my knives, but I don't go easy on them. This thing is a beast!

Update... not happy

I was happy with this blade. However it was only a matter of time until the wife got ahold of it. She doesn't use my knifes, the sharpness scares her, she would rather hack something with a butter knife and keep her digest I guess. Anyhow I must have left it on the cutting board and it found it's way into the sink for an overnight stay. When I found it the next day it was ruined. The rust is to deep to polish out. Not happy... in my mind a 12hour sit with some moisture shouldn't destroy a blade with today's materials. Wish I could post photos here to show the carnage, some of the worst of it is where the blade meets the handle.
