With the Kaizen II, MIYABI once again elevates the art of Japanese knife-making, its name meaning “improvement” or “change for the better.” Handcrafted in Seki, Japan, each knife pairs traditional craftsmanship with advanced hardening technologies and a refined modern aesthetic. At its core lies resilient FC61 super steel, clad in 48 layers of stainless steel and adorned with a mesmerizing, acid-darkened flower Damascus pattern. The double FRIODUR® ice-hardening process enhances corrosion resistance and durability, while artisans hand-finish every blade using the revered three-step Honbazuke method for exceptional sharpness.
