Outstanding technology - ceramic blade = glass shards
Kyocera ceramic knives use outstanding technology to produce a ceramic material that is harder than steel. Be aware that diamond is not a metal and it is the hardest material on the planet. The blade has micro serrations, similar to shards of glass along its edge. Ceramic material is hard and brittle, and is not flexible (malleable) like metals. These knives maintain their razor sharp edge when used correctly for the slicing and dicing of soft vegetables, especially tomatoes and most salad vegetables. Always wipe the knife and place in a knife block, not in a drawer. Do NOT drop the knife because one can easily chip the tip of the blade.I have given many of these knives as gifts and continually warn that the blade is VERY sharp (shards of glass) and many have under estimated their sharpness.I believe the knife can only be factory sharpened if it became dull.

Much better than expected
The best tomato slicer I have. But use as intended, just cutting & slicing, this knife cannot be used as a wedge or chisel like many people want to use knifes for.
