Shun Cutlery

YOUR NEW BEST FRIEND IN THE KITCHEN

If there is one knife that you simply can't be without, it's this one. The Shun Classic 8-inch Chef's Knife is an all-purpose blade ideal for a wide variety of cutting tasks. The eight-inch length is perfect for preparing fruits, vegetables, proteins, and other foods. The wide blade keeps knuckles off the cutting board and is extra handy when transferring cut food from board to pan. With its curved belly, the Chef's knife can be gently "rocked" through fresh herbs or spices to produce a very fine mince. Shun Classic's thinner blades makes it lighter and less tiring to use than comparable European-style Chef's knives.

The Shun Classic 8-in. Chef's Knife is part of the Shun Classic line of tasteful and contemporary cutlery. The Shun Classic line features beautiful Damascus-clad blades and D-shaped ebony Pakkawood handles. Yet behind these handcrafted knives' beauty is function: razor-sharp blades offering top performance. Shun's proprietary high-performance VG-MAX steel, which provides incredible edge retention, is clad with Damascus stainless steel, then ground and bead-blasted, revealing the flowing pattern of the layered steel. The result is a line of knives that are sharp, durable, and corrosion resistant, as well as beautiful to behold. The Shun Classic line also offers you the widest assortment of both traditional culinary blade shapes and cutting-edge designs, so you can always find the right knife for the task.

Knife Center has an excellent selection of kitchen knives, kitchen accessories, cutlery, and kitchen gadgets.

Excellent! But...
I've been using this knife for about 4 years now. The sharpest knife. Can get crazy sharp if you know how to sharpen it. Great fit and finish, but a slight roughness near the bolster/heel area of the blade when using a pinch grip. Not too bad at all. But... It is in the delicate side. Ok for a well controlled kitchen (home cooking or tranquil commercial kitchen). I would think twice about using this in a hustle bustle professional kitchen where things are manhandled somewhat. I've managed to chip the tip of the blade. I didn't even drop it... don't know when it happened. Sent it to Kai, and they fixed it at no cost (but I was without this knife for 3 weeks or so). I bought a decent Chinese chef knife that is bit more robust for rough use (outside of my own kitchen). Inside my domain where I can baby this thing, this puts the joy in cooking!

What can you say? It's a Shun...
Been looking forward to our first set of quality kitchen knives. Did a ton of research - considered Wustofs because they're built like tanks and my family is hard on their knives and was a little concerned about some reviews/comments that I found about the knives being brittle or fragile. Well - now I own a set of Shun's and can say with confidence - those were all a bunch of junk. These knives are perfectly sturdy for any chopping/cutting activity in the kitchen. Now if you use your kitchen knife as a screwdriver or try to use it to cleave a thigh bone from a cow....well that's your own stupid fault. Use the right tool for the right job and you'll be fine. Oh - and I would recommend getting the honer. These knives are wicked crazy sharp out of the box but as with any good knife it will only work as well as it's cared for - a sharp knife is a safe knife. Shuns are a little pricey but as they say "buy once, cry once".

Shun Knife
I have been searching for a really good kitchen knife. This is perfect. I will be ordering some more Shun knives as soon as they are in stock. The price was great compared to prices in the UK and I received the item within 10 days-brilliant.
