OP001222: 2-Piece N0102 Paring Knife Set, Carbon Steel

Opinel

Its exceptional cutting ability and very easy sharpening makes this knife a "must-have" for any kitchen. Perfect for chopping, peeling, slicing and paring fruits, vegetables and trimming meats. Stabilized beechwood is ultra-resistant and can be washed in a dishwasher, though it is not recommended. The blades are made from X90 carbon steel, with a high carbon content, which is what makes it possible to achieve the excellent hardness after heat treatment, guaranteeing the strength of the cutting edge, resistance to wear and easy of sharpening. The hardness obtained after heat treatment are theoretically slightly greater in steels that do not contain chrome. The cutting strength is therefore better with a carbon steel knife and sharpening is much easier than stainless steel blades which contain chrome. However, carbon steel has a low resistance to corrosion caused by moisture, which means that certain precautionary measures are necessary when using and storing a carbon steel knife. We recommend that you avoid damp environments and dry the blade after each use.

Sweet, and Sweet
Wifey has been using Messermiester from Portugal the last few years. She's a 95% paring knife user. I am afraid to convince her to use this knife, I got it so sharp it may cost her a finger or two. Gave the other to the kids; they don't sharpen much and use a dishwasher for all kitchen stuff. I will be anxious to check it out in a few weeks. Definitely worth the money
