Highly functional, very sharp chef's knife. A definite WIN for me.
My old kitchen knives are best described as pointy wedges. Yes, I can cut with them but it was an effort, and they could smash softer foods, so I decided to get new kitchen knives.This 7.5 inch chef's knife from White River is not cheap, but it costs less than many top-rated chef's knives from other, quality manufacturers of kitchen cutlery. It looked just right for my needs BUT it has the SUBSTANTIAL ADVANTAGE that it's blade is CPM MagnaCut steel. I'm not any sort of chef so one long-blade knife and one short-blade knife is all I need, and this knife fits my long-blade needs perfectly. It is controllable and comfortable in my hand, Additionally, I bought the 2.625 inch, "Small Game Knife" from White River to be my short knife.The only possible downside is that MagnaCut steel is not easy to sharpen but (for a non-chef like myself) I anticipate that I will never need to sharpen it, so I don't care about it's sharpenability.Having used this knife for a while I can now say that I am very glad I bought it. :-)
