Miyabi Cutlery by Zwilling J.A. Henckels
The production of high-quality knives is a tradition that dates back many years in Japan. Japanese knives are synonymous with sharpness, precision and the elegance of artistic cutting. Zwilling's Miyabi brand embodies these values, time and time again, in knives full of character designed for the most well designed kitchens.

Miyabi continues to strive for perfection with the introduction of Miyabi Kaizen - Japanese for "improvement' or "change for the better". This next generation of Miyabi knives, made in Seki, Japan, combines the greatest hardening technology with the artistry of traditional craftsmanship.

All knives are carefully machined down to the very last detail. In the hands of experienced masters, each blade is given authentic Japanese Honbazuke honing for scalpel-like sharpness: every blade is sharpened twice by hand on rotating grindstones before being polished on a leather wheel.

CMV60 steel is a particularly hard and tough steel: the base for sharpness and sharpness retention that cannot be achieved with conventional knife steals. A special hardening process enables the steel to reach its full potential.
  • Authentic Japanese Blade Profile
  • CRYODUR blade, hardened using a specifically developed process to guarantee extreme hardness.

  • A special blade treatment creates the striking Damask flower pattern on each knife.
  • Blade Length: 5.25"
  • Blade Steel: CMV60 Stainless Steel
  • Blade Hardness: 60 HRC

Great utility knife
I have been using this knife for a wide variety of tasks--peeling and slicing fruits and vegetables, trimming meat, cutting hard cheese. I find the handle very comfortable, and the handle is at an angle to the edge of the blade, not parallel to it. This makes it very easy to push the blade down onto whatever is being cut. It arrived incredibly sharp, and every so often I have used a strop to maintain the sharpness. I tend to love all the knives I have, but assuming I could bring myself to throw any out, this one could replace a bunch of the others.
