Shun Cutlery

Also called a tomato or sandwich knife, the Shun Sora Serrated Utility Knife is a blade with many uses. In size, it's between the chef's knife and the paring knife, but its blade is narrower and straighter. The serrated edge makes it ideal for slicing foods with tough skins and soft interiors—such as avocados. It works well on sausages, especially those with tougher casing, and with hard cheeses. Shun Sora provides handcrafted Japanese quality at an amazing price.

The Shun Sora Serrated Utility Knife is part of the exciting Shun Sora line that provides exceptional handcrafted Shun quality at an amazing price. Sora uses Shun's proprietary Composite Blade technology to bring together a VG10 San Mai cutting edge with a Japanese 420J stainless steel upper. This technology puts high-performance material exactly where it's needed—on the edge. The two blade sections are laser cut, then fit together like pieces of a jigsaw puzzle. Braze welding permanently joins them. The attractive wavy pattern at the joint is based on traditional Japanese sword hamon lines. While Sora's blade shapes and handle design are traditional Japanese, the textured TPE polymer handle material provides a contemporary look, secure grip, and balance, and is easy to maintain.

Shun laser cuts complex interlocking blade components from two different types of steel—like pieces of a jigsaw puzzle. Then they permanently join them into a single blade through a metallurgical process known as brazing. Brazing uses a third metal, a braze alloy, to join the two parts being brazed together; in this case, the two interlocking pieces of the knife blade.

You can see the brazed joint in a Shun Composite Blade as a thin copper-colored line between the two blade steels. A brazed joint is as strong or stronger than the metals being joined. It also adds an attractive decorative touch. With Shun's Composite Blade technology, you can get all the cutting advantages of ultra-premium steel without having to pay an ultra-premium price. You will find this amazing technology in the Shun Sora line. VG10 san mai comprises the lower part of the blade, that is, the cutting edge. The upper part, above the braze line, is highly stain-resistant 420J Japanese stainless steel.
